You say you started a special diet because you had a mystery illness and
now it has progressed? Go to the Doc and have check up.
You didn't tell us your approximate age, height, weight, bp,
prescriptions, chronic conditions, supplements, or etc.
I repeat go to a medical doctor.

Have you tested if you might have a hyperglycemia from overstimulated
gluconeogenesis from amino acids and high glucagon levels?

It is possible although not likely in most diets. The symptoms are almost
the same.

Yes, but the neuropathic pain in her feet was the main problem.

She slowly improved after about three months and then, after about a
year, she started to improve quite a lot. We are hoping she will be
back to normal one day. The "experts" estimates vary from 18 months
upwards.

She has been building up on the carbohydrates very slowly.

Have you seen a neurologist? Your problem may not be diet related at
all.

Peripheral nerve damage will recover very slowly.

Funny, I thought it sounded more like alkalosis, the paresthesia
symptoms are more associated with that arent they?

Basically colitis, had it once before eight years ago. Went overboard
with vegan, no carbs a radical diet change. About two weeks later,
all this neuropathy, muscle twitches, burning started. Blood test,
negative for celiac.

Sounds like you have acidosis. you whole body is too acidic and you need to
raise your pH level. This can be associated with too many proteins and loss
of electrolytes via sweating etc.

Try this

Baking soda (sodium bocarbonate) at 10 am and 4 pm each day (not close to
food), about 500mg (large capsule size) for a few weeks. If it works, get
on more magnesium and potassium and start eating fresh vegetables, not
cooked.

My wife had the same problem along with neuropathic pain in her feet.
The problem was due to years on a low carbohydrate, anti candida, diet
and the resulting lack of the vitamin B's. If that is your problem the
resulting nerve damage will take a long time to correct. Make sure you
start taking 200mg B1 every day along with a multi B complex and
sublingual B12.
